There are plenty of truffle pasta recipes. But we tried to use the famous recipe from the Big Mamma restaurant: truffle pasta. Preparation

First, in a saucepan, cook the pasta in boiling salted water until the time indicated on the package.

Meanwhile, you will prepare the truffle cream. Melt the butter with the truffle oil in a frying pan over medium heat.

Add the chopped shallot and half of the finely chopped truffles to the melted butter. Then add the sliced button mushrooms and let them sauté for a few minutes until they are tender in the butter, shallot and truffles.

Then, deglaze with the white wine, stirring well with a wooden spatula to loosen the juices. Cook over low heat for 10 minutes.

Once cooked, mix everything to obtain a homogeneous cream.
STEP 6
Gently mix the mascarpone with the truffle cream in a saucepan and heat gently until the mascarpone is well incorporated.
STEP 7
Finally, add the drained cooked pasta to the pan and add the grated parmesan and a little cooking water if necessary to adjust the consistency of the sauce. Mix well to coat the pasta with the sauce.
