What is the truffle capital of France?

What is the difference between summer truffle and winter truffle?
Summer truffle (Tuber Aestivum) and winter truffle (Tuber Melanosporum) are two distinct varieties of truffle, both from an organoleptic and physical point of view.
First of all, you should know that the summer truffle is harvested, as its name suggests, in the summer and the winter truffle, in the winter. The Tuber Aestivum has black or brown skin and is slightly rougher than its companion. In addition, its flesh is significantly lighter in color than Tuber Melanosporum. Finally, its flavor is less intense, more delicate and volatile than the black diamond of Périgord. Indeed, its delicate hazelnut flavor is more subtle than the musk and undergrowth aroma of the Périgord truffle.
These two truffles share certain characteristics, however, their differences in seasonality, appearance and flavors allow for great culinary diversity throughout the year.
