MANUFACTURING OF OUR CANNED BLACK TRUFFLE PIECES
When the truffles are prepared and cleaned by hand, it sometimes happens that some truffles are damaged and no longer suitable for this category. In this case, we lighten the truffle of its imperfections by trimming it and then we cut it into large, high-quality pieces to allow you to cut it easily and without debris.
After being selected, the pieces of truffles are placed in their jar. Here, we are talking about “net truffle weight at casing”. Then we add truffle juice and salt. The whole corresponds to the “net weight”. The jars are then sterilized. The “drained net weight” corresponds to the weight of the pieces of truffles cooked without the juice contained in the jar.

The first boiling or first cooking is usually reserved for preserves intended for catering professionals. It is a single and unique sterilization that is applied to the truffle , in order to preserve all its precious flavors. Maison Truffes Henras was the first to master its production.

The Tuber melanosporum has been the most used truffle species in cooking for more than two centuries. Its indescribable fragrance is very intense, whether in hot or cold culinary preparations.Also known as the Périgord black truffle , it is harvested from mid-November to mid-March, the most mature truffles are found from mid-January . The canned truffle from the first boil allows this truffle to be consumed throughout the year without worrying about the seasonality of the product while retaining all its flavors.
