Although the peak of the activity of the black truffle season is concentrated in the months of December, January and February, we work it all year round. From fresh truffles to the preparation of frozen truffles, from preserves made from fresh fully ripe black truffles to preserves made with slivers of truffles already cooked in mother boxes, we have plenty to take care of.
BLACK PÉRIGORD TRUFFLES OUT OF SEASON
First, we have to manufacture custom products for our processing customers looking for canned truffles . Let's not forget, the truffle is an ingredient, a bit like a spice, which is incorporated into many products. We work on specific and personalized products for our processing customers: large pieces of canned truffles from the first boil that will be used by foie gras houses, canned truffle peel for the production of truffled Bries , and even broken summer truffles for a few manufacturers looking for truffle “markers” .
Out of season, it is also an opportunity for us to innovate! We test new recipes for canned truffles , without aromas, or new containers, always with the aim of facilitating the work of our processing customers or introducing neophytes to truffles .
DIFFERENCE BETWEEN FIRST BOIL BLACK TRUFFLE CANNED AND CLASSIC CANNED
If the preserves from the first boilings are made in the height of the season, from fresh Périgord black truffles (this is their particularity), the classic preserves are made out of season, from whole truffles , pieces or slivers of truffles which have been cooked in "mother boxes" upstream.
Indeed, in high season, the black truffle generates a real race against time: in a few days (and this every week), everything must have been cleaned, prepared and sold, either for sale of fresh truffles , or transformed into preserves .
Having a canning activity guarantees the quality of the fresh truffle sold : no need to "empty the fridge" and offer in week N + 1 truffles hollowed out 3 weeks before, everything that is not sold or sellable fresh is transformed...
THE TRUFFLE IN SEASON IS ALSO THE TRUFFLE OF SAINT JEAN IN SUMMER!
