Preparation of the recipe
STEP 1
First, cook the potatoes in boiling salted water until they are tender. drain them and let cool a little.
2ND STEP
Peel the cooked potatoes and mash them finely using a potato masher or a fork.
STEP 3
In a large bowl, combine the mashed potatoes, beaten egg, flour, grated truffle and a pinch of salt. Mix well until you obtain a homogeneous paste.
STEP 4
Then, on a lightly floured work surface, form sausages of gnocchi dough, then cut them into small pieces of approximately 2 cm.
STEP 5
Bring a large pot of salted water to a boil. Add the gnocchi and cook until they rise to the surface, which takes about 2 to 3 minutes.
STEP 6
Meanwhile, prepare the truffle sauce. In a pan, melt the butter over low heat. Add the olive or truffle oil and crème fraîche. Stir gently until the sauce is well combined.
STEP 7
Grate the remaining truffle into the sauce. Season with salt and pepper. You can also prepare this truffle sauce or a parmesan and truffle sauce, as you wish.
STEP 8
Finally, once the truffle gnocchi are cooked, gently drain them and transfer them to the pan with the sauce of your choice. Mix gently to coat the truffle gnocchi with the sauce.
Serve hot, garnished with a few extra slices of truffle. You can accompany your gnocchi with a salad or meat. Enjoy your food !
