Preparation of the recipe
STEP 1
To start, prepare the ravioli dough. Arrange the flour in a fountain and add the eggs, olive oil and a pinch of salt. Mix gently with your previously washed hands until the dough begins to form.

Then knead the dough for 10 minutes until it is smooth and elastic. Then wrap it in plastic wrap and let it rest in the refrigerator for at least 30 minutes.

While the dough is resting, prepare the filling. Grate the truffle into a bowl and add it to the ricotta, parmesan and chopped garlic. Season with salt and pepper.

Then, once the ravioli dough has rested, divide it into two pieces. On a lightly floured work surface, roll out each piece of dough into a sheet.

Place spoonfuls of truffle stuffing on one of the sheets of dough, leaving an even space between each pile of stuffing. Lightly brush the dough around the filling with water to help seal the ravioli.
