THE ENTIRE EXTRA CATEGORY
Corresponds to the most high-end truffles, they have a dark black color, firm flesh and a beautiful rounded shape. They have no apparent visual defect, a perfect shape and their smell must be intense.

THE FIRST CHOICE CATEGORY
Still represents a top of the range truffle, dark black with firm flesh and regular size but it may have one or two holes. It remains very fragrant with a subtle and powerful aroma.

Comes from very ripe truffles of the first freshness. They were opened during our meticulous sorting work or broken during picking. The pieces produced are regular and come from tuber melanosporum with firm flesh, presenting a beautiful visual.

Maison Henras canned truffles can be stored for a very long time as long as the lid has not been opened. They should be placed away from light and heat. Once opened, they can be kept in the refrigerator and should be consumed quickly.
- How to sterilize truffles?
The sterilization of fresh truffles is a process to be carried out in a professional context, it is impossible to sterilize your own truffles. The process followed by Maison Henras is a canning process. Our truffles are cooked in autoclaves and thus come out sterilized. This technique makes it possible to preserve a large part of the flavors and olfactory qualities of fresh truffles, and makes it possible to consume black truffles all year round.
- Can truffles be kept in the fridge?
Fresh truffles can be kept in the refrigerator with absorbent paper to be changed every day, unlike canned truffles which, as long as they are not opened, can be kept at room temperature. Once started, it should be kept in the refrigerator and consumed quickly.

The canned truffle is a product full of advantages. First of all, this is the reason for its creation, it is possible to taste it all year round, summer and winter. Then, the jars keep much longer than fresh truffles. Finally, thanks to the canning process, the truffle retains its organoleptic qualities, and even develops another meaty flavor in the mouth.

How to store a truffle in a jar?
Maison Henras canned truffles have a long shelf life, as long as the lid has not been opened. However, to preserve their conservation and quality, certain rules must be respected. It is important to store them in a cool, dry place away from light. Once opened, be sure to keep them in the refrigerator and then consume them within 48 hours.
How to sterilize truffles?
At Maison Henras, we strongly advise against sterilizing truffles at home; this sterilization will not be sterilization, it will be pasteurization. Sterilization of truffles should only be carried out by professionals. Our sterilization process is carried out in professional autoclaves following a protocol validated by the CTCPA, an official French body. In addition, our equipment is regularly revised and tested. This sterilization process consists of controlling and guaranteeing an exact temperature (110°), for an exact duration, at an exact pressure. All these steps aim to remove any bacteria or germs present in the truffle, in order to preserve the product and ensure that it does not present any danger to health.
Can truffles be stored in the fridge?
The conservation of fresh truffles is different depending on the variety of the truffle and the time of the season. In fact, summer truffles will keep very well for 10 days, while black Périgord truffles can be kept for 2 or even 3 weeks. To preserve the truffle, nothing could be simpler, simply place it in the refrigerator on absorbent paper and change it daily.
