How to sterilize truffles?

At Maison Henras, we strongly advise against sterilizing truffles at home; this sterilization will not be sterilization, it will be pasteurization. Sterilization of truffles should only be carried out by professionals. Our sterilization process is carried out in professional autoclaves following a protocol validated by the CTCPA, an official French body. In addition, our equipment is regularly revised and tested. This sterilization process consists of controlling and guaranteeing an exact temperature (110°), for an exact duration, at an exact pressure. All these steps aim to remove any bacteria or germs present in the truffle, in order to preserve the product and ensure that it does not present any danger to health.

Can truffles be stored in the fridge?

In fact, summer truffles will keep very well for 10 days, while black Périgord truffles can be kept for 2 or even 3 weeks.
