MAKING OUR PÉRIGORD BLACK TRUFFLE BUTTER
Dehydrated Périgord black truffle butter 1.7% (equivalent to 8.5% fresh black truffle) without added flavor is made in our workshop. The delicious flavor of the Périgord black truffle diffuses perfectly into the butter, giving it an incomparable taste.
To make this butter in its workshop, Maison Henras used an innovative process of drying Périgord black truffles which allows a large part of its flavor to be preserved. You will find the authentic taste of the undergrowth of tuber melanosporum , subtle, light and intended to enhance the flavor of the butter.
BLACK TRUFFLE FROM PERIGORD
The Périgord black truffle is a fragile product, very sensitive to heat treatment. It has difficulty withstanding sterilization and without the implementation of real specialist know-how, its taste can be altered. Many manufacturers of “truffle” products have found an easy solution: they swap black truffles for summer truffles (cheaper) and integrate powerful, often caricatured aromas.
Maison Henras has decided to offer a new, unique generation of “truffled” products which offer the true taste of cooked Tuber melanosporum, without artifice or added aroma.-
