MANUFACTURING OF OUR ARTISANAL CHIPS WITH BLACK TRUFFLE FROM PERIGORD
Maison Henras has selected black Périgord truffles in the middle of the season, specifically for these crisps. They are small but very aromatic and ideal for tolerating the freeze-drying process at room temperature without degrading their taste.
They come from different partner truffle growers , in Dordogne, Charentes, Quercy Blanc and also from the province of Teruel, in Spain.
They underwent a unique, patented process of gentle freeze-drying, then were reduced to powder to be used in our salts, oils, butters and crisps. This Périgord truffle powder is a real concentrate of the true flavor of truffles , very far from the synthetic flavors used by manufacturers.
These crisps were made by a Landes potato producer, from his local harvest. The salt used comes from Salies du Béarn and the sunflower oil from the South West.
The chips are handcrafted and cooked in a cauldron, which gives them a unique crispness.
BLACK PÉRIGORD TRUFFLES
The Périgord black truffle is a fragile product, very sensitive to heat treatment. It does not support sterilization with difficulty and without the implementation of real specialist know-how, its taste may be altered. Many manufacturers of "truffle" products have found an easy solution: they swap black truffles for summer truffles (cheaper) and incorporate powerful, often caricatural aromas.Maison Henras has decided to offer a new generation of "truffled" products that offer the true taste of cooked Tuber melanosporum, without artifice or added aroma.
