Les morceaux de truffes noires du Périgord sont issus des truffes auxquelles nous avons enlevé des défauts. Les morceaux sont tout aussi bons que les truffes entières, mais ils se conservent un peu moins longtemps. Nos truffes fraîches sont conditionnées en sachets sous vide et expédiées par transport express, avec des blocs gel. À réception, nous conseillons d'ouvrir les sachets, de passer les truffes sous un filet d'eau fraîche, de les sécher et de les conserver dans une boîte hermétique, au frais (entre 2° et 5°c), avec un papier absorbant à changer tous les jours. ATTENTION - son prix change chaque semaine en saison, nous ne pouvons pas prendre de "commande" d'avance. Nous rappelons que la truffe est à son apogée gustative fin janvier. DESCRIPTION PRODUIT

The pieces of Périgord black truffle (Tuber melanosporum) come from whole black truffles at maturity from which we have removed the damaged parts. This product has the same taste qualities as whole Extra truffles, in a different form.

CONSEIL D'UTILISATION

Pieces of black truffles are cooked like whole truffles. Fresh truffles can be cut into strips and added at the end of cooking, to enhance your dishes. We recommend around 15 grams of fresh truffle per person.

The black truffle has undergrowth, musky and earthy notes. It is the ally of your meat preparations in sauce but also of pasta and potatoes.

CONSEIL DE CONSERVATION

Even if their taste qualities are equivalent to that of the Extra whole black truffles, the pieces of black truffles are cut up, their flesh is therefore more exposed to the air. They therefore keep for a shorter time.

Upon receipt, place them in an airtight box in absorbent paper and store them in the refrigerator for a maximum of 4 days.

INFORMATIONS DE LIVRAISON

- Our truffles are shipped from Monday to Thursday morning in packaging that ensures the maintenance of an optimal temperature.
- They are vacuum-packed with absorbent paper to protect them during the entire transport period
- A cooling block is placed in the package to keep the product cool.
- Our labels are glued by hand, an additional guarantee of quality: the packages are prepared with care.

THE SELECTION OF OUR FRESH TRUFFLES

Our fresh truffles arrive in our preparation workshops in batches of land. Our experts are then responsible for sorting, washing, brushing and cutting each truffle , one by one by hand. This meticulous method makes it possible to select the best product for your plates.

During the selection, our experts are interested in the shape and size of the truffles , to offer you a product that can easily be transformed in the kitchen. However, another factor comes into play and this is by far the most important, the flavor of the truffle. Canifage (making a cut in the skin of a fresh truffle), allows our professionals to check the quality of the truffle. They check the color of the flesh which must be dark, with white veins. During sorting and selection our experts cut the truffles in order to remove the damaged edges giving our pieces of black truffles .

Black Périgord truffles ( Tuber melanosporum) can therefore be harvested in France, Spain, Italy, Australia or even Chile. We find this name on other products, such as Paris mushrooms or Brussels sprouts.
