The Burgundy truffle (Tuber Aestivum var uncinatum) is a late variety of summer truffle (September - November). It is harvested relatively little in France (a few hundred kilos) and comes mainly from the Balkans (sometimes passing through Italian brokers who offer uncinatum "from Italy"...). Tastier than summer truffles, it is eaten raw and should not be cooked, as it loses its flavor after any heat treatment.
Our fresh Burgundy truffles are received in our workshops still in the ground, in order to preserve them. After receipt, the truffles are cleaned under water and brushed by hand. The truffles are then dried in the open air while Henras experts begin the process of selecting the best truffles .
As with the black truffle , the truffles are felt and weighed in order to be able to analyze both the texture and density. Canifing allows the flesh of the truffle to be analyzed to determine its maturity. This meticulous work allows us to exclude all truffles of poor quality, wormy or damaged by the climate. Only the best truffles will be offered for sale fresh during the season.
BURGUNDY TRUFFLES
The Burgundy truffle (Tuber aestivum var uncinatum) is much more bumpy and irregular than other species of truffles, uncinatum in Latin meaning hooked. Its warty skin is black, while its flesh is grayish marbled with fine white veins. Its taste is close to that of the summer truffle , both woody, with notes of hazelnuts and mushrooms, however the Burgundy truffle has a more powerful aroma than its summer cousin, the summer truffle (Tuber aestivum).
Tuber uncinatum is the second most consumed truffle in France after the black truffle. Although the power of its aromas is weaker, it is interesting for discovering another truffle aromatic bouquet which will delight truffle lovers and make them wait until the tuber melanosporum season.

Where does the Burgundy truffle grow?
The Burgundy truffle fears high summer heat, so it grows in cooler areas and at altitude. It is found mainly in Spain and France.
What is the price of Burgundy truffles?
The Burgundy truffle is much cheaper than the black Périgord truffle. Indeed, its price is closer to the summer truffle, of which it shares certain flavors, but with its more intense taste it is a little more expensive than this one. We can consider that the price per kilo, variable like all truffles, of the Burgundy truffle oscillates between 300 and 400 euros.
