SELECTION OF FRESH BURGUNDY TRUFFLES
The Burgundy truffle (Tuber Aestivum var uncinatum) cannot be compared to the black Périgord truffle , it is a more common and widespread product in Europe. The Burgundy truffle finds its place in the traditional cuisine of the regions where it is harvested.
Our fresh Burgundy truffles are received in our workshops still in the ground, in order to preserve them. After reception, the truffles are cleaned under water and they are brushed by hand. The truffles are then dried in the open air while the Henras experts begin the process of selecting the best truffles .
As for the black truffle , the truffles are palpated, weighed in order to be able to analyze both the texture and the density. Canifage makes it possible to analyze the flesh of the truffle to determine its maturity. This meticulous work makes it possible to discard all the truffles of poor quality, wormy or damaged by the climate. Only the best truffles will be offered for sale fresh during the season.
BURGUNDY TRUFFLES
The Burgundy truffle (Tuber aestivum var uncinatum) is much more bumpy and irregular than its counterparts, uncinatum in Latin meaning hooked. Its warty skin is black, while its flesh is greyish mottled with fine white veins. Its taste is similar to that of the woody summer truffle , with notes of hazelnuts and mushrooms, however the Burgundy truffle has a more powerful aroma than its summer cousin, the summer truffle (Tuber aestivum).
Tuber uncinatum is the second most consumed truffle in France after the black truffle. Although the power of its aromas is weaker, it is interesting to discover another truffled aromatic bouquet that will delight truffle lovers and make them wait until the tuber melanosporum season.

The Burgundy truffle fears high summer heat, so it grows in cooler areas and at altitude. It is found mainly in Spain and France.
What is the price of Burgundy truffles?
The Burgundy truffle is much cheaper than the black Périgord truffle. Indeed, its price is closer to the summer truffle, of which it shares certain flavors, but with its more intense taste it is a little more expensive than this one. We can consider that the price per kilo, variable like all truffles, of the Burgundy truffle oscillates between 300 and 400 euros.
