The Burgundy truffle or autumn truffle is the perfect transition between the summer truffle and the black truffle. Its more pronounced and intense taste than the summer truffle will delight the taste buds of truffle lovers who wish to obtain it all year round.

Like its sister, the summer truffle, the Burgundy truffle, despite its more pronounced notes, is eaten raw, grated on your preparations.
Add it at the last moment for a subtle crunch on your plates. We recommend around 15g of fresh truffle per person. Give free rein to your imagination for your truffle creations.

Available in season, our fresh Burgundy truffles are packaged in vacuum bags and shipped by express transport.
Upon receipt, we recommend opening the bag, drying the truffles and storing them in an airtight box, in a cool place, accompanied by an absorbent paper to be changed every day.
A Burgundy truffle will keep for about 8 days.

For the sake of freshness, shipments of fresh truffles are only made from Monday to Thursday. The price of fresh truffles varies each week depending on the volume harvested and market prices.

100% tuber uncinatum

The Burgundy truffle (Tuber Aestivum var uncinatum) cannot be compared to the black Périgord truffle , it is a more common and widespread product in Europe. The Burgundy truffle finds its place in the traditional cuisine of the regions where it is harvested.

Our fresh Burgundy truffles are received in our workshops still in the ground, in order to preserve them. After reception, the truffles are cleaned under water and they are brushed by hand. The truffles are then dried in the open air while the Henras experts begin the process of selecting the best truffles .

As for the black truffle , the truffles are palpated, weighed in order to be able to analyze both the texture and the density. Canifage makes it possible to analyze the flesh of the truffle to determine its maturity. This meticulous work makes it possible to discard all the truffles of poor quality, wormy or damaged by the climate. Only the best truffles will be offered for sale fresh during the season.

The Burgundy truffle (Tuber aestivum var uncinatum) is much more bumpy and irregular than its counterparts, uncinatum in Latin meaning hooked. Its warty skin is black, while its flesh is greyish mottled with fine white veins. Its taste is similar to that of the woody summer truffle , with notes of hazelnuts and mushrooms, however the Burgundy truffle has a more powerful aroma than its summer cousin, the summer truffle (Tuber aestivum).

Tuber uncinatum is the second most consumed truffle in France after the black truffle. Although the power of its aromas is weaker, it is interesting to discover another truffled aromatic bouquet that will delight truffle lovers and make them wait until the tuber melanosporum season.
