MANUFACTURE OF OUR CANNED BROKEN BLACK TRUFFLES
Nothing is lost during the preparation of our truffles . During sorting, selection and cleaning, we recover all the shards that separate from our first-class black truffles to break them up.
We add to that second category truffles and we grind everything very finely to recover a precious mixture: the 100% Tuber melanosporum broken . Added to this is our tasty black truffle juice , which adds substance to also incorporate into your recipes for an ever more intense experience.

The sweet fragrance of Tuber melanosporum has been present on our plates for a long time, it has been the undisputed queen of gastronomy for more than 200 years. Its characteristic flavors, both intense and subtle, make the Périgord black truffle an ally of choice in the creation of creative and gourmet recipes, cold or hot.
During the end of year celebrations, truffles are eaten in many homes, this period is favorable, because the black truffle is harvested from mid-November to mid-March. Canning broken truffles makes it possible to consume Tuber melanosporum throughout the year, regardless of seasonality.

The rarest truffle is the white Alba truffle. This Italian truffle is highly sought after and top of the range and grows in the Piedmont region. It has alliaceous flavors as well as a smell of honey, lime blossom and sometimes hay.
