Pesto is a classic Italian condiment originating from Northwestern Italy, Liguria. Traditionally, “alla genovese” pesto, the best-known variation, is prepared by mashing together fresh basil, garlic, pine nuts, grated pecorino or parmesan cheese, and extra olive oil. blank in a marble mortar until a homogeneous paste is obtained. Preparation
STEP 1
First, lightly toast the pine nuts in a pan over medium heat until they begin to brown. Make sure not to burn them. Let them cool

Peel and slice the garlic cloves.

In a blender or food processor, add the toasted pine nuts, minced garlic and grated parmesan. Blend until you get a grainy consistency.
STEP 4
Then, slowly add the extra virgin olive oil while continuing to blend until the mixture is smooth.
STEP 5
Gently peel the white summer truffle and cut it into thin strips.
STEP 6
Finally, add the truffle slices to the pesto mixture and mix briefly to incorporate them.
STEP 7
Season with salt and pepper. Mix again to combine well.
STEP 8
Taste and adjust seasoning if necessary. You can add truffle oil for more flavor.
