FIRST BOILED TRUFFLE VOCABULARY

When we make our canned truffles from the first boil, we select each truffle according to specific criteria: their shape, their appearance and their size. At each stage of their production, a new vocabulary appears: net weight when casing, net weight, net drained weight.
HOW DO WE MAKE THEM?
Each truffle , pieces or truffle peels are arranged in a jar. We then add truffle juice and salt before placing the jars in the autoclaves for sterilization . After cooking, the truffles lost almost a quarter of their weight . This loss is found in the juice contained in the jar. It is a real concentrate of taste!
