Olive oil or grapeseed oil?
The choice of oil to use will mainly depend on your preferences. Indeed, if you want a rich and fruity oil, it will be preferable to turn to extra virgin olive oil which goes perfectly with truffle.
However, if you want a more neutral taste of the oil and thus make the most of the delicate flavor of tuber melanosporum , we recommend opting for grapeseed oil.
Preparation
STEP 1
To start your preparation, chop the black truffle so that you have small pieces of truffle which are distributed in the oil.
2ND STEP
Then, take your grapeseed oil and pour it into a saucepan, add your previously chopped tuber melanosporum. Then mix everything so that the truffle is evenly distributed.
STEP 3
Next, heat your oil on the stove with a cooking thermometer to be able to control the temperature. In fact, you should not heat the oil too much as this could destroy the delicate flavors of the black truffle. Once your preparation has reached 65°C, remove it from the heat.
STEP 4
Finally, let your oil cool to room temperature. Once cold, pour it into a container.
Your truffle oil is now ready to be used in your preparations!
