Preparation of the recipe
STEP 1
Start by preparing the artichokes by removing the tough outer leaves until you reach the tender leaves. Then cut off the tops of the artichokes and remove the hay inside. Cut the artichokes into quarters.
2ND STEP
In a large saucepan, melt the butter over medium heat. Add the chopped onions and garlic and fry until translucent.
STEP 3
Add the artichoke wedges to the pan and toss well to coat with the butter and onions. Cook for a few minutes until the artichokes begin to soften slightly.

Next, pour the vegetable stock into the pan, enough to cover the artichokes. Bring to a boil, then reduce the heat and simmer for about 20 to 25 minutes, until the artichokes are tender.
STEP 5
Remove the pan from the heat and let it cool slightly. Use an immersion blender to puree the soup until smooth.
STEP 6
Finally, return the pan to low heat. Add the crème fraîche and stir until well incorporated. Season with salt and pepper. For more deliciousness, you can add a drizzle of truffle oil.
