We have revisited the sweetbreads, in sweetbreads with a truffle crust. This cooking recipe is full of flavor from our fresh or canned truffles . A truffle preparation, worthy of a great chef, which will be perfect for your end-of-year celebrations or during a winter meal accompanied by a salad or soup. Add to your recipe book!

Preparation of the recipe

STEP 1

To begin this cooking recipe, you must first prepare the sweetbreads by soaking them in cold water for 2 hours to remove impurities.

2ND STEP

Then drain them and carefully remove the membranes and fatty parts.

STEP 3

In a large skillet, heat a little olive oil over medium heat. Add the pieces of sweetbreads and brown them on all sides for about 5 minutes. Remove them from the pan and set aside.

STEP 4

In the same pan, add the butter and sauté the shallots and garlic until translucent.

STEP 5

Add the chopped mushrooms and sauté them until they turn golden brown.

STEP 6

Sprinkle the flour over the shallots and garlic, mix well and cook for a few minutes to make a roux.

STEP 7

Next, deglaze the pan with the white wine, scraping the cooking juices from the bottom of the pan.

STEP 8

Add the chicken stock and return the pieces of sweetbreads to the pan. Add the truffles cut into pieces

STEP 9

Simmer over low heat for about 30-40 minutes, until the sweetbreads are tender and the sauce thickens. Add the crème fraîche at the end of cooking and season with salt and pepper.

STEP 10

Preheat your kitchen oven to 200°C (thermostat 6-7)

STEP 11

Roll out the puff pastry on a lightly floured surface. Place the pieces of sweetbreads and truffle in the center of the dough.

STEP 12

Fold the dough around the sweetbreads to form a crust. Cut off the excess dough and seal the edges well

STEP 13

Brush the surface of the crust with the beaten egg yolk for golden browning.

STEP 14

Finally, bake for about 25 to 30 minutes, or until the crust is golden and crispy.

Serve hot, cut into slices and accompanied by the truffle sauce. It's ready !
