MANUFACTURING OF OUR CANNED WHOLE TRUFFLES
Our Extra whole truffles are washed, ground and packaged with the greatest care by our experts. Even today the truffles are washed by hand in order to preserve them from any aggression. They are then sorted and the best ones are set aside to be used in the production of our Extra first-cooked whole truffle preserves.
After being carefully selected and weighed, the truffles are placed in their jar. Here, we are talking about " net truffle weight at casing ". Then we add truffle juice and salt. The whole corresponds to the " net weight" . The jars are then sterilized. The " drained net weight" corresponds to the weight of the cooked truffle without the juice contained in the jar.

The Tuber melanosporum has been the most used truffle species in cooking for more than two centuries. Its indescribable fragrance is very intense, whether in hot or cold culinary preparations.Also known as the Périgord black truffle , it is harvested from mid-November to mid-March, the most mature truffles can be found from mid-January . The canned truffle from the first boil allows this truffle to be consumed throughout the year without worrying about the seasonality of the product while retaining all its flavors.

When to pick black truffles?
The black truffle is harvested between November and March. Each year the season is variable and the quantity harvested also.
