MAKING OUR GUÉRANDE SALT WITH BLACK TRUFFLE WITHOUT AROMA
Our Guérande salt with 1% dehydrated black truffle (equivalent to 5% fresh black truffle) without added aroma, is made within Maison Henras. The ingredients that compose it are carefully selected: coarse salt from the Guérande saltworks and black truffles from the Périgord Henras harvested in the middle of the season, at perfect maturity.
Salt as a flavor enhancer enhances the subtle and delicate flavor of the Périgord black truffle. Using no flavoring in this recipe, you will find the true taste of Tuber melanosporum .
To make this salt, Maison Henras used an innovative process of drying the black Périgord truffle which allows a large part of its flavor to be preserved.
BLACK PÉRIGORD TRUFFLES
The Périgord black truffle is a fragile product, very sensitive to heat treatment. It does not support sterilization with difficulty and without the implementation of real specialist know-how, its taste may be altered. Many manufacturers of "truffle" products have found an easy solution: they swap black truffles for summer truffles (cheaper) and incorporate powerful, often caricatural aromas.
Maison Henras has decided to offer a new generation of "truffled" products that offer the true taste of cooked Tuber melanosporum, without artifice or added aroma.
