We share with you a quick and easy recipe to add flavors to your dishes: truffle mayonnaise. Although seemingly “complicated”, mayonnaise is simple to make. This condiment is often present in your dishes and we will show you how to make it elegant and full of taste with our fresh truffles or broken truffles .
Preparation
STEP 1
First, in a bowl mix the egg yolks, mustard, salt and pepper.
2ND STEP
Start whisking the mixture with a hand whisk or electric whisk.
STEP 3
While continuing to whisk, slowly add the oil in a very thin stream. Continue whisking until the mayonnaise begins to thicken.
STEP 4
Then, once the mayonnaise thickens, you can add the broken truffle or if you are using fresh truffle, grate it finely and incorporate it into the mayonnaise.
STEP 5
For those with a sweet tooth, you can add truffle oil for more flavor.
STEP 6
Finally, once ready, transfer the truffle mayonnaise to a clean, airtight jar. It can be kept in the refrigerator for 24 hours.
STEP 7
Truffle tip: to keep it longer, simply add a little lemon or vinegar to keep it for another day.
STEP 8
