The next day, separate the liver in two and place one half on cling film. Then garnish with your truffle, previously cleaned to remove any trace of soil. Then cover with the second part of the liver.
Roll everything tightly into a cylinder shape. Finally, tie the ends. Finish by covering everything with a sheet of aluminum foil. Immerse the preparation in boiling water for 20 minutes. Once the time has expired, remove the foie gras and immediately immerse it in iced water for another 20 minutes.
Remove the aluminum foil while keeping the cling film tightly wrapped in a tea towel and place everything in the refrigerator for 48 hours.
