How to cook canned truffles?

Canned truffles are used in almost the same way as fresh ones. First of all, it is recommended to use enough, at least 10 to 15 grams per person.

Unlike fresh truffles, the latter has little benefit in being used grated in a cooking recipe because it has lost all its delicious crunch. It must therefore be cooked with products that are preferably as neutral as possible, such as rice to make a risotto, pasta, eggs, cream, a sauce, etc.

How to make foie gras with black truffle?

Do you want to make a truffled foie gras worthy of a great chef for your Christmas meal? We reveal our secrets to making this festive dish. First of all, it is important to choose quality foie gras and truffles. Next, you must devein your liver then salt and pepper it.

The next day, separate the liver in two and place one half on cling film. Then garnish with your truffle, previously cleaned to remove any trace of soil. Then cover with the second part of the liver.

Roll everything tightly into a cylinder shape. Finally, tie the ends. Finish by covering everything with a sheet of aluminum foil. Immerse the preparation in boiling water for 20 minutes. Once the time has expired, remove the foie gras and immediately immerse it in iced water for another 20 minutes.

Remove the aluminum foil while keeping the cling film tightly wrapped in a tea towel and place everything in the refrigerator for 48 hours.
