MANUFACTURE OF OUR VIRGIN OLIVE OIL WITH BLACK PERIGORD TRUFFLE 2%
Our olive oil with 2% dehydrated Périgord black truffle (equivalent to 10% fresh black truffle) is produced in our workshop. We attach particular care to the selection of the ingredients that compose it, in order to offer an exceptional product.
It is therefore made by our teams, based on black olive oil, which makes its taste milder, with less bitterness than green olive oil. It brings together the subtlety of black truffle (Tuber melanosporum) and the roundness of olive oil. Its black truffle flakes diffuse their subtle aromas of undergrowth and create a perfectly balanced taste for a delicate seasoning.
To make this oil, Maison Henras used an innovative process for transforming the black Périgord truffle which allows it to retain a large part of its flavor. You will find the authentic taste of Tuber melanosporum , subtle, light and intended to sublimate the flavor of your culinary creations.
BLACK PÉRIGORD TRUFFLES
The Périgord black truffle is a fragile product, very sensitive to heat treatment. It does not support sterilization with difficulty and without the implementation of real specialist know-how, its taste may be altered. Many manufacturers of "truffle" products have found an easy solution: they swap black truffles for summer truffles (cheaper) and incorporate powerful, often caricatural aromas.
Maison Henras has decided to offer a new generation of "truffled" products that offer the true taste of cooked Tuber melanosporum, without artifice or added aroma.-
