Preparation

STEP 1

First, preheat your kitchen oven to 180°C (thermostat 6).

STEP 2

Start by preparing the stuffing. In a frying pan, melt half the butter over medium heat (you can also add a little truffle oil for more flavor). Add the chopped shallots and finely chopped mushrooms.

STEP 3

Saute them until they are tender and all the liquid has evaporated. Then add the minced garlic and cook for another minute. Remove from heat and let cool slightly.

STEP 4

Meanwhile, for fresh truffles, clean and brush them carefully. Then cut your truffles (canned or fresh) into thin strips.

STEP 5

Season the inside of the chicken with salt and pepper.

STEP 6

Then, fill the chicken with the stuffing, alternating with the truffle strips.

STEP 7

For more truffle flavor, you can also slip slices of truffle under the skin of the chicken.

STEP 8

Close the chicken with toothpicks to keep the stuffing inside.

STEP 9

In a large ovenproof casserole dish, melt the remaining butter or truffle oil over medium heat. Add the stuffed chicken and brown it on all sides for a few minutes.

STEP 10

Deglaze with the white wine, scraping the juices from the bottom of the casserole dish with a wooden spatula. Simmer for a few minutes to reduce the white wine slightly. Your sauce for your poultry is ready. Add salt and pepper if necessary. For extra creaminess, you can add crème fraîche to your sauce.

STEP 11

Add the chicken broth to the pot to partially cover the chicken.

STEP 12

Finally, transfer the pan to the oven and cook the chicken for 1 hour to 1 hour 30 minutes, basting regularly with the cooking juices, until cooked through.

STEP 13

Once cooking is complete, remove the chicken from the oven and let it rest for a few minutes before cutting.

STEP 15

When serving, garnish the whole truffle-stuffed chicken with fresh parsley.
